This recipe is a breakfast favorite for all. A very close relative of the South Indian Uttapam. Very easy and healthy!
Preparation Time: 15 minutes
Serves: 2 persons
Whole Rice Grains (Washed and Soaked in Water for minimum 1 hour)
Chopped Coriander: 1 tablespoon
Chopped Green Chilli : 1 tablespoon (optional)
Grated Carrots: 2 tablespoon
Salt to taste.
Water as required.
Refined/ Olive Oil to Pan fry
Wash and finely grind the soaked rice with a little water. Take the mixture out in a bowl and add half teaspoon salt. Add more water if required to make the batter of a free flowing consistency. Now add in the Coriander, Carrot, Chilli and mix well.
Now heat a non stick tawa or fry pan and grease it with a little oil. Add a big spoonful of batter and rotate the pan over heat so that the batter evenly spreads to form a pancake. Now add few sprinkles of water and cover the Pan with a Lid for a minute. After you uncover the lid, the Pancake would be perfectly cooked. Now flip the Pancake gently and let it cook for thirty seconds on the other side.
You Pancake is ready. Now repeat the Process until all Pancakes are done. Serve hot with tomato ketchup.
Variation: You may also stuff the pancakes with a potato and onion mash mixture and serve hot with South Indian Sambhar for an instant Dosa appeal.
