This recipe is indeed a perfect for breakfast or times when you want to skip your dinner. Diabetics can have it as a snacking recipe between meals or it can just be a evening snack for fit foodies.
Preparation Time: 15 minutes.
Serves: 4 persons.
Plain Rolled Oats: 2 cups.
Cauliflower: 1/2 cup cut in small florets.
Capsicum: 1/2 cup sliced.
Boiled/ frozen peas: 1/4 cup.
Onions: 2 medium sliced.
Green Chilies: Chopped. As per taste.
Refined Oil/ Olive Oil: 1 tablespoonful
Mixed Herbs: 1/2 teaspoonful
Salt and Pepper for Seasoning.
Vegetable Stock/ Water: 2 cups approx.
Method: Heat Oil in a Pan and add the sliced onions and fry till translucent. Now add the cauliflower, capsicum and peas, mix well. You can substitute the vegetable with seasonal vegetables or vegetables of your choice like Broccoli, Carrots, Beans, Tomato, Zucchini etc. Saute the vegetables on high flame for 5 minutes like stir fry and then lower the flame and add the rolled oats. Mix well and saute for a minute. Now add vegetable stock or water to get your desired consistency. Let it simmer for a minute. Now add the mixed herbs and salt and pepper according to your taste. If you want a spicy flavor, it is the right time to add the chopped green chilies. Mix well and its just ready!
Garnish with a sprig of coriander or parsley and serve hot.
