This could be a weekend special dish when you are looking for a change from you regular diet plan. Note down thr ingredients and try it out.

Preparation Time: 35 minutes

Serves : 6 people


Chicken : 1 kg

Curd : 1/2 cup

Ginger garlic pate : 2 tablespoon

Long grained rice, preferably Basmati Rice : 2 cups

Onion : 4 big, finely sliced

Ghee/ Refined Oil : 4 tablespoon

Green chilli : 4 or according to taste cut into slits length wise
Mint leaves : 7-8

Coriander leaves : 1/2 small bunch

Bay leaf : 2

Cardamom : 5-6

Cloves : 5-6

Cinnamon : 1 inch piece

Poppy seeds : 2 teaspoon

Water : 4 and 1/2 cup

Red chilli powder : 1/2 teaspoon

Salt according to taste

Hard boiled eggs  : 2, sliced

Saffron : 1/2 teaspoon soaked in 3 tablespoon lukewarm milk.

Onion : 1 big sliced and deep fried.

Method :  In a bowl, mix the curd, red chili powder, salt and ginger garlic paste. Add the chicken pieces, marinate and keep aside for 2-3 hours so that the chicken is infused with all the flavor. Now in a pressure cooker or rice cooker add the washed rice, 3 and 1/2 cups of water, 2 bay leaves, 1 teaspoon oil and cook until done. Now heat oil in a pan, add the sliced onion and fry until golden brown, now add the marinated chicken with all their juices. Fry and cook till all the juice is absorbed by the chicken. Now make a paste of the cardamon,  cloves, cinnamon and poppy seeds and make a dry powder, which is the special masala. Now, add the powder to the chicken, 1 cup of water and cook until done. Add the chopped mint and coriander.

Now, its time for us to assemble the biryani. Take a deep microwave safe dish or you can take a handi in case you do not have a microwave.  Now, grease the bottom of the pan, place one layer of rice, add the soaked saffron and add a layer of chicken. Repeat the process until all layers are done. The top layer should be of rice. Add the rest of saffron,  and garnish with the sliced hard boiled eggs and fried onions, slit chillies. Now cover with a lid and microwave for 2 minutes on high on s preheated microwave. Alternatively you can seal the handi with some left over flour dough and put in on dum over the gas stove on slow flame for 7-8 minutes.

You Dum biryani is ready, serve hot with cucumber / boondhi raita.
