This is a perfect breakfast recipe for Egg lovers and for those who prefer something yummy and healthy to kick start the day with.

Serves: 1 person
½ slice brown bread
1 tablespoon olive/ refined oil
1 clove garlic chopped
2 beaten eggs for for each omelette
2 tablespoons grated Mozzarella cheese
1 large tomato chopped
1 teaspoon dried basil leaves
In a pan add bread cut into cubes and toss with oil and chopped garlic. Keep aside. Now add little oil on a non stick pan and add a beaten eggs mixture to make an omelette. When the egg begins to set, evenly spread across the bottom of the pan and reduce the heat to low.Now add the cheese and basil on top. Top it with the tomatoes and bread mixture over half of the omelette; fold the other half over the filling.
Let it cook until golden brown. Now take out the omelette on a plate and serve hot with ketchup.
