Caramel pudding is a classic all time favorite pudding and a semi sweet dessert. While preparation the temperature of the milk has to be checked so that the egg does not curdle making it a smooth pudding.
Preparation Time : 45 minutes
Serves : 4-6 persons
Sugar for caramel : 2 tablespoons
Water : 1/2 cup
Milk : 1/2 litre
Egg yolks : 6
Salt : a pinch
Sugar : 2 tablespoons
Vanilla Essence : 1/2 teaspoon
For the caramel, heat the sugar in a pan without adding any water. A non stick pan is more preferable. Allow it to caramelize on low heat until brown and then slowly add hot water until sugar is dissolved but not making it too watery.
Keep it aside.
In another pan, warm up the milk. It should not be too hot. Add a pinch of salt and 2 tablespoon sugar. Stir well so that the sugar dissolves. Keep it aside.
Beat the 6 egg yolks until smooth and add 1 teaspoon of Vanilla Essence. Now slowly mix your egg yolks with the milk.
Now take a heat proof glass dish or any other baking dish and place the caramel at the bottom of the dish. Now slowly place the mixture of the milk and egg yolks above the caramel in the dish. Now place the dish in the steamer or pressure cooker without whistle and steam until firm. This will take 30-40 minutes.
Cut the pudding and serve. You can also use small bowls for steaming to make single servings.
