For making the most famous pasta in Arrabiata sauce you can use any pasta like penne, fusili, spaghetti or bow pasta. I have used Penne pasta for this recipe. You can add your favourite veggies like zucchini, carrots, cabbage, spring onions, French beans, peas or mushroom, shredded Chicken etc.
Preparation Time : 30 minutes
Serves : 2-3 persons
Pasta : 250 grams
Tomatoes : 6 medium, boiled, peeled and chopped
Tomato puree : 1/2 cup
Tomato ketchup : 1 tablespoon
Garlic : 1 tablespoon chopped
Red chillies : 2 chopped
Onion : 2 chopped
Salt as per taste
Oregano : 1/2 teaspoon
Mixed herbs : 1 teaspoon (optional)
Parsley / Coriander leaves: 1 tablespoon finely chopped
Basil dried or fresh : 1 teaspoon chopped
Olive / Refined oil : 3 tablespoons
Boil the pasta in a pan in 1 litre of water and salt till just cooked that means al dante with a crunch. Drain the water, drizzle little oil and keep aside.
Heat 1 tablespoons of oil in a pan and sauté the garlic till it changes colour. Add the onion and fry till it becomes pinkish in colour. Add the red chilli, chopped tomatoes and sauté for about 5 minutes. Now, add the tomato puree and ketchup and mix well. Add the salt and oregano and cook till the sauce is done. Add a little water if the sauce is too thick.
Now heat 2 tablespoons oil in a pan, add the pasta and mixed herbs and toss well. Now, add the prepared Arrabiata sauce and mix well. Garnish with parsley or Coriander and serve hot.
