Omelette is loved by almost all non vegetarians. This Omelette adds a zing to the regular Omelette making it delicious. You can have it at breakfast, at lunch or dinner as a side dish or even as a snack.
Preparation Time : 15 minutes
Serves : 4-6 persons
Eggs : 6
Green chillies : 2 chopped
Potatoes : 2 (cut into 1 inch pieces)
Coriander / Dhania leaves : 1 tablespoon chopped
Onion : 1 large sliced
Refined oil : 5 tablespoons
Cheese : 2 slices
Butter : 1 teaspoon
Black pepper powder : 1/2 teaspoon
Salt as per taste
In a pan heat 3 tablespoons oil, add the potato pieces and salt and cook till fully done. In another pan, sauté the onion slices in butter until golden brown and keep aside.
Now, in a bowl Whisk all the eggs till fluffy. Add the chopped coriander leaves, onions, green chillies, black pepper and salt. Mix well. Now cut the cheese slices into small pieces (or you can tear with your hand). Add the cooked potatoes and cheese to the egg mixture and beat well.
In a deep frying pan (preferably non stick) add 2 tablespoons of oil and pour in the egg mixture. Cook for a minute. Cover it with a lid and cook for another 2-3 minutes on medium heat. Now flip to the other side and cook both sides until golden brown. Take out in a plate, cut in slices like a pizza and serve hot.
