This is a mildly sweet dessert which tastes best when served chilled in earthen cups or bowls.
Preparation Time : 15 minutes
Serves : 8-9 persons
Milk : 1/2 litre
Rice flour : 4 tablespoons
Cardamom/ Elaichi powder : 1/4 teaspoon
Sugar : 3 tablespoons
Almond : 1 tablespoon sliced
Pistachio : 1 tablespoon sliced
Cashew nut : 1 tablespoon chopped
Saffron / Kesar : 1/4 teaspoon (soaked in 2 tablespoon warm milk)
In a pan, boil the milk and then let it simmer. Slowly add the rice flour while stirring continuously to prevent formation of lumps. Once the flour blends well with the milk then add in the sugar while stirring constantly till the mixture begins to thicken. Turn off the flame and add the sliced almonds and pistachios and chopped cashews. Add the cardamom powder and mix well.
Pour the mixture into earthen, glass or ceramic bowls and garnish with saffron. Refrigerate for minimum 2hours and serve chilled.
