Preparation Time : 45 minutes
Serves : 4-6 persons

Ingredients :

Milk : 1 litre
Joha / Basmati rice : 1/4 cup
Sugar : 6 tablespoons
Cardamom / Elaichi powder : 1/4 teaspoon
Raisins : 2 tablespoons
Cashews : 2 tablespoons
Almonds : 1 tablespoon
Bay leaf : 2

Method :

Wash the rice and soak in a little water for about 30 mins.

In a deep bottom pan boil the milk and add the rice discarding the water and the bay leaves. Let it cook while simmering. It will take around 20-30 minutes. Take out one rice kernel and check by pressing between your fingers if the rice is cooked or not. Now add the sugar and cardamom powder and cook on a low flame. Add the Cashews and almonds while stirring constantly. Let the rice cook completely till it has thickened to the desired consistency. Turn off the flame and add the Raisins. Remove the bay leaves before serving. Serve chilled, warm or at room temperature with a garnish of Cashews and almonds.
