This is an easy side dish for people who loves brinjal in any form. The aroma of basil elevates this simple dish.
Preparation Time : 15 minutes
Serves : 2 persons
Eggplant / Brinjal : 1 big (preferably the round variety) cut in wedges
Shallots / small onions : 4-6 (each cut into 4 pieces)
Salt as per taste
Refined / Olive oil : 1 tablespoon
Roasted Cumin / Jeera powder : 1 teaspoon
Pepper powder : 1/2 teaspoon
Dried Basil Leaves : 1 tablespoon (I have used #Keya dried basil)
Garlic cloves / pickle : 1 tablespoon
In a non stick pan heat oil, add the brinjal and Shallots and sauté for 2 minutes.
Add the salt, pepper and cumin powder and mix well. Now add the whole garlic cloves or you can use Garlic pickle to make this dish more tastier.
Cook till the brinjal is soft. If you wish you can gently mash the Brinjal pieces. Turn off the flame and sprinkle the dried basil. Serve hot.
