A perfect Indian anytime munching or a tea time accompaniment snack, Nimki is popularly a deep fried snack often found in small diamond pieces or in a triangular shape. You can store Nimki’s in an air-tight container for about 2 weeks and relish for yourself or serve your guests.
Preparation Time : 30 minutes
Serves : 40-50 servings
Refined flour /Maida : 500 grams
Refined oil : 2 cups
Salt : 1 teaspoon
Onion seeds / Kalonji : 1 tablespoon
Lukewarm water as required for the dough
In a big bowl, take the flour and add the salt and Kalonji seeds. Add and combine well to get a crumble.Make smooth and firm dough by adding lukewarm water and knead it well. Let the dough rest for 30 minutes to 1 hour covered.
Now, make small balls and roll it like a roti / chapati / Poori with a rolling pin. Now cut parallel lines in the center of the circles leaving the edges. Now first fold it to a semi circle and again fold it giving a triangular shape. Press the edges. Similarly make the other Nimki’s.
Heat oil in a kadhai or deep bottom pan, now drop in the Nimki’s one by one and deep fry on medium heat till golden brown. Drain excess oil in a kitchen towel.
Your Nimki’s are ready to be served.
