For making the most famous pasta in white sauce you can use any pasta like penne, spaghetti, macaroni or bow pasta. This sauce is creamy and really rich due to the amount of cheese added to it. I have used Fusilli commonly known as Spiral Pasta.
Preparation Time : 20 minutes
Serves : 3-4 persons
Pasta : 250 g
Water: 1 litre
Refined oil : 4 tablespoon
Onion : 2 medium diced
Garlic b 1 teaspoon chopped
Red, yellow or green capsicum : 1 diced
Baby corn : 3 (chopped into diagonal pieces)
Butter: 2 tablespoon
Oregano: 1 teaspoon
Basil : 1 tablespoon (fresh or dried)
Refined Flour / Maida : 2 table spoon
Milk : 2 cups
Salt as per taste
Pepper powder : 1/2 teaspoon
Red chilly flakes: 1/2 teaspoon
Fresh Cream : 1/4 cup (optional)
Cheese: 100 grams grated (you can use processed, cheddar or parmesan cheese)
* You can add your favourite veggies like zucchini, carrots, cabbage, spring onions, French beans, peas or mushroom, shredded Chicken etc.
Boil the pasta in a pan in 1 litre of water and salt till just cooked that means al dante with a crunch. Drain the water, drizzle little oil and keep aside.
In a pan, heat the butter and add the flour. Cook for about 2 minutes and add the milk while stirring constantly so that no lumps are formed. You plain white sauce is ready.
Now heat Refined oil in a pan and sauté the garlic. Add onion, baby corn and capsicum and fry them for 5 minutes. Add the prepared white sauce. Season with salt and pepper. Add oregano, red chili flakes and basil and mix well. Toss in the pasta. Add the fresh cream and mix well and cook for 2 minutes.
You can garnish with grated cheese and enjoy as it is or garnish it with grated cheese, sprinkle a bit of oregano and basil and grill it for 5 minutes in a preheated oven or microwave.
Your creamy white sauce pasta is ready. Serve hot.
