This is an amazing recipe for Diabetics to lure their sweet tooth. This Mug Cake is a single serving cake. If you wish to make for more then one person just multiply the ingredients. It’s so fast that it only requires one minute to cook and you can dig in directly. For non Diabetics just replace the Sugar Free (I have used #SugarFreeNatura) with one tablespoon of sugar.
Preparation Time : 10 minutes
Serves : 1 person
Egg : 1
Refined oil / melted butter : 5 tablespoons
Sugar free powder : Single serving Packet or 1 small teaspoon
Cinnamon / Dalchini powder : a pinch
Coffee powder : 1/4 teaspoon
Refined flour/ Maida : 1 tablespoon
Milk : 2 tablespoons
Baking powder : 1/4 teaspoon
Salt : a pinch
Sieve the flour and baking powder, keep aside.
In a small bowl, whisk an egg with butter/ oil and milk till it becomes fluffy. Now add salt to the mixture and add the flour mixture folding slowly in clockwise directions. The more air you incorporate the more soft will the cake be. Now add the sugar free and fold the mixture. *You can also add walnuts or raisins to this cake if you wish.
Now grease a microwave safe coffee mug and pour in the batter slowly. Preheat the microwave for 30 seconds and then microwave the cake on HIGH for 1 minute. Your cake is absolutely ready. You can top the cake with a little chocolate sauce and directly dig in.
* Check with a toothpick whether it comes out clean or not. If the cake seems undercooked microwave for another 10 seconds.
