Serves : 4-6 persons

Ingredients :

Potato : 4 large
Eggs : 2
Refined flour /Maida : 3 tablespoons
Salt as per taste
Pepper : 1/4 teaspoon
Dried Basil : 1/2 teaspoon
Mixed Herbs : 1/4 teaspoon
Refined oil for deep frying

For dip:
Mayonnaise : 4 tablespoons
Chili sauce : 1 tablespoon
Chili flakes : 1/2 teaspoon
Sugar : a pinch

Method :

For the Chili Mayo Dip, mix mayonnaise, chili sauce, chili flakes and sugar in a small bowl and keep aside.

Peel and wash the potatoes and dry them with a kitchen towel. In a bowl, grate the potatoes (not too fine) and mix in the eggs, flour, salt, pepper, basil and mixed herbs. Mix the batter well.

Heat oil in a kadhai or pan, pour in spoonful of batter and deep fry till golden brown. Drain excess oil and serve hot with the Chili Mayo Dip.
