This is a healthy version of banana Muffins. If you are a diabetic supplement the sugar with 3 teaspoon of sugar free powder. #SugarFreeNatura You will enjoy the same taste with lesser calories and sugar.
Preparation Time : 30 minutes
Serves : 10-15 persons
Refined flour /Maida : 2 cups
Rolled oats : 1 cup
Egg : 1
Banana : 3 big or 4 small
Baking powder :2 teaspoon
Baking soda : 1 teaspoon
Salt : a pinch
Sugar : 1/2 cup
Melted butter / Refined oil : 1/3 cup
Milk : 3/4 cup
Vanilla essence : 1 teaspoon
Raisins : 2 tablespoons chopped (optional)
Mash the bananas. Add sugar, vanilla essence, milk, melted butter, egg and mix well. Sieve the flour, baking powder and soda with salt. Add the oats. Now slowly add little by little to the wet banana mixture. Fold in slowly by mixing in one direction. Don’t over mix or the Muffins will become hard.
Grease mini Muffin moulds with butter or oil and dust with little flour. You can use the silicone Muffin moulds which are now a days readily available in the market.
Preheat oven or microwave. Put a spoonful of batter into the moulds. Bake in preheated oven or microwave in Convection mode for 15 to 18 minutes at a temperature of 400 degree F. Check after 10 minutes with a toothpick whether it comes out clear or not and then you can extend the time to more 5 minutes and check and finally allow for more 3 minute if the Muffins are not baked thoroughly.
Remove from moulds and serve warm with tea or coffee.
