Muffins are my favorite tea time accompaniment. These Banana Muffins are easy to make and will surely be appreciated by your family and friends.
Preparation Time : 30 minutes
Serves : 4-6 persons
Refined flour /Maida :1/2 cup
Egg : 1
Choco Chips : 1/4 cup
Banana : 3 big or 4 small
Baking powder :1 teaspoon
Baking soda : 1 teaspoon
Salt : a pinch
Sugar : 3/4 cup
Melted butter / Refined oil : 1/3 cup
Vanilla essence : 1 teaspoon
Raisins : 2 tablespoons chopped (optional)
Mash the bananas. Add sugar, vanilla essence, melted butter, egg and mix well. Sieve the flour, baking powder and soda with salt and add little by little to the wet banana mixture. Fold in slowly by mixing in one direction. Add the Raisins and mix. Don’t over mix or the Muffins will become hard.
Grease mini Muffin moulds with butter or oil and dust with little flour. You can use the silicone Muffin moulds which are now a days readily available in the market.
Preheat oven or microwave. Put a spoonful of batter into the moulds. Sprinkle some Choco Chips on top. Bake in preheated oven or microwave in Convection mode for 10 to 15 minutes at a temperature of 350 degree F. Check after 10 minutes with a toothpick whether it comes out clear or not and then you can extend the time to more 2 minutes and check and finally allow for more 3 minutes if the Muffins are not baked thoroughly.
Remove from moulds and serve warm with tea or coffee.
