Dahi vada also known as Dahi bhallas is a famous street food loved across India. These are basically deep Fried and soaked Urad daal vadas served with yogurt, tamarind and mint chutney. Try out my easy recipe and prepare delicious Dahi vadas for your loved ones at home!!

Preparation Time : 30 minutes
Soaking Time : 8-9 hours or overnight
Serves : 6-8 persons

Ingredients :

Urad daal : 1 cup
Baking soda : a pinch
Raisin / Kismis : 1 tablespoon, soaked and finely chopped
Ginger : 1 tablespoon finely chopped
Salt to taste
Red chilli powder : 1 teaspoon
Asafoetida / Hing :a pinch
Refined Oil for deep-frying
Dahi / Yogurt : 5 cups beaten
Mint chutney for garnishing
Tamarind chutney for garnishing
Roasted Cumin / Jeera powder : 2 teaspoons
Coriander / Dhania : 1 tablespoon, chopped
Chaat Bhujia / Sev : 2 tablespoons
Hot water : 2 litres

Method :

Soak daal in enough water for 8-9 hours or preferably overnight. Drain excess water and grind the daal into a smooth paste.

Add salt, 1/4 teaspoon red chilli powder, chopped Ginger, soda, raisins and asafoetida to the daal batter. Now heat oil in a kadai or pan for deep frying the vadas.

Pour spoonful of batter into the hot oil carefully and fry until light golden brown.

Drain excess oil and soak the vadas in hot water in a big bowl for two minutes.

Gently squeeze the vadas with your hands to drain out excess water. Arrange the vadas in single serving plates or a big platter. Pour the beaten yogurt over it. Sprinkle salt to taste. Top with enough mint chutney and tamarind chutney and sprinkle red chilli powder and roasted cumin powder over it. Garnish with chopped coriander and Chaat bhujia.

You Dahi vadas are ready to be served.

* If you wish you can also garnish the Dahi vadas with chopped mint leaves, chopped green chillies or pomegranate seeds.
