Palak paneer is a vegetarian favorite and can be relished with rice, roti or naan. Here is a simplified recipe for delicious palak paneer.
Preparation Time : 15 minutes
Serves : 4-6 persons
Spinach / palak puree : 1 cup
Paneer / Cottage cheese : 250 grams
Kasuri Methi / Dried Fenugreek leaves : 1 tablespoon
Garam Masala : 1 teaspoon
Onion : 2 chopped finely
Ginger garlic paste : 1 tablespoon
Refined / Mustard oil : 2 tablespoons
Tomato : 2 chopped
Salt as per taste
Fresh cream : 1/4 cup
Cumin / Jeera seeds : 1 teaspoon
Cut paneer into cubes and keep aside.
Blanche spinach leaves by putting in hot water for 3 minutes and then in ice cold water for 2 minutes. This will help the spinach to retain its fresh green colour. Now in a blender make a puree.
Heat oil in a pan, add Cumin seeds and allow it to crackle. Now add the ginger garlic paste and onions and fry till golden brown. Now add the chopped tomatoes and salt and cook for 5 minutes.
Now add the spinach puree and cook for 2 minutes. Add the cubed paneer and cook covered for 5 minutes. Crush the Kasuri Methi with your hands and add it to the paneer. Add the Garam Masala and mix well. Stir in the cream, mix well and remove from flame.
Serve hot with rice, Pulao, roti or naan.
