I always have Tomato and basil soup in #PizzaHut This one is my version of tomato and basil soup. Be in winters or lazy summer weekends this soup is a sure hit for tomato lovers!!
Preparation Time : 30 minutes
Serves : 4-6 persons
Tomato : 500 grams blanched, skin and seeds removed, chopped
Tomato puree : 1 cup
Onion : 2 large chopped
Butter :1 tablespoon
Olive oil : 4 tablespoons
Cloves / Laung / Lavang : 3-4
Garlic : 1 tablespoon chopped
Basil : 2 tablespoons (fresh, chopped)
Sugar : 1 teaspoon (optional)
Salt as per taste
Pepper / Kali Mirch powder : 1 teaspoon
Worcestershire sauce : 1/2 teaspoon
Vegetable stock/ water : 2 cups
Fresh Cream : 1/4 cup
In a deep bottom pan, heat oil and butter. Add the onion and garlic and fry till light brown. Add the cloves, chopped tomatoes, Worcestershire sauce, sugar salt and pepper. Add the tomato puree and vegetable stock, allow everything to the boil. Now on low flame allow it to simmer for about 30 minutes.
Blend the tomato soup with a hand blender or in a mixer grinder to a smooth soup. Pour it in a pan and allow it get warm. Check the consistency, if you think it’s too thick you can add a little vegetable stock or water to adjust the consistency.
Pour in individual soup bowls and garnish with fresh cream and basil.
Serve hot with bread croutons or garlic bread.
