Goja and Tea seems like a combo made in heaven. Whether breakfast, college snacking time or with your evening tea, this sweet is loved by all. Goja is a well-known sweet in Assam and Bengal but very less people prepare it at home. I guess this easy recipe can surely help you to give it a try!
Preparation Time : 1 hour
Serves : 20-30 servings
Sugar : 3 cups
Water : 3 cups
Saffron / Kesar : 1/4 teaspoon
Cardamom /Elaichi powder : 1/2 teaspoon
Milk : 1 tablespoon
Refined flour / Maida: 2 cups
Baking powder: 1 teaspoon
Desi Ghee: 4 tablespoons
Desi Ghee / Refined oil for deep frying
Salt : a pinch
In a pan add the water and sugar and let it come to a boil. Add the cardamom powder and boil till the sugar dissolves in the water and a thick sugar syrup is formed. Add 1 tablespoon Milk and let it come to a boil. You will notice that the dirt in the sugar syrup will accumulate on top. Strain and keep aside. The syrup should be of 2 thread consistency.
In a bowl, Sieve baking powder, flour and salt. Add the ghee and combine well to get a crumble. Make smooth and firm dough by adding warm water and knead it well. Let the dough rest for 30 minutes to 1 hour covered.
Now roll out the dough, and cut into rectangular gojas. The dough should be thick to get the goja shape.
Heat oil or ghee in a kadhai or pan and deep fry the gojas until golden brown on medium heat. Add the fried gojas to the hot sugar syrup and immerse for around 30 minutes. Now drain excess sugar syrup and serve warm.
