Have leftover pesto sauce and confused what to do with it!! Well here is a quick paneer pesto recipe that you will love… An ideal starter recipe to treat your guests with!!

Preparation Time : 15 minutes
Serves : 4-6 persons

Ingredients :
Paneer : 250 grams 
Fresh basil leaves : 2 cups 
Pine nuts : 1/2 cup toasted 
Garlic : 3-4 cloves 
Olive oil : 1 cup 
Parmesan cheese : 1 cup grated
Salt as per taste 
Black pepper powder : 1/2 teaspoon 

Method :

Cut paneer into big square or triangular pieces and keep aside.

In a mixer grinder jar, add the garlic cloves, pine nuts, basil, olive oil and grind into a coarse paste. Add 1/2 cup cheese, salt, pepper and grind until smooth. The pesto sauce is ready.

Now dip the paneer pieces in the pesto sauce. Heat little oil in a non stick pan and shallow fry the paneer pieces till golden brown. Take out in a kitchen towel to drain excess oil.

Garnish with the parmesan cheese and serve hot.
