For health conscious people fried starters are a nightmare. Here is a quick healthy recipe which is ready in just minutes and can be served as a starter or you can have it at any time of the day. Serve it in small portions in shots glasses!!

Preparation Time : 10 minutes
Serves : 4-6 persons

Ingredients :

Carrots : 3 big
Spinach / palak leaves : 20 leaves without stem
Pepper powder : 1/2 teaspoon
Salt as required
Coriander / Dhania leaves : 1 tablespoon chopped
Jaggery / Gur : 1 tablespoon (optional)
Lemon juice : 2 tablespoons
Water : 1 cup

Method :

Boil spinach leaves for 2 minutes and take out in ice cold water. This is called blanching which helps to retain the beautiful color of the spinach leaves.

Now in a pan boil the carrots. In a blender jar add the boiled carrots, blanched spinach, coriander, jaggery, salt and pepper. Add water to get a pouring consistency. Blend until you get a smooth puree. Serve in shot glasses and garnish with a sprig of mint.

Serve at room temperature or chilled.
