This is a wholesome rice preparation made with vegetables and daal. Can be served simple with raita or your favorite Curry. This is a wholesome meal and is almost like dry khichdi.

Preparation Time : 20 minutes
Serves : 4-6 persons

Ingredients :

Rice : 2 cups (preferably basmati, joha or KRT parboiled rice)
Masoor Daal / Red Lentil : 1/2 cup
Brinjal : 1 (cut into medium sized pieces)
Lady’s finger : 4-6 (cut into medium sized pieces)
Potato (optional) : 1 (cut into wedges)
Curry leaves : 15-20
Green Chili : 2-3 (slitted)
Black Mustard seeds / Rai : 1 teaspoon
Salt as per taste
Onion : 1 large chopped
Ginger garlic paste : 1 tablespoon
Cumin / Jeera powder : 1 teaspoon
Garam Masala : 1 teaspoon
Mustard / Refined oil : 4 tablespoons
Water : 4 cups
Bay leaf : 2

Method :

Heat oil in a pressure cooker and add the black Mustard seeds and Curry leaves.

Now add the bay leaf, onion and ginger garlic paste. Add all the powdered masala or spices and saute for 2 minutes. Add the slitted green chili.

Add the vegetables and fry for 3-4 minutes. Now add the washed and drained rice and daal. Fry for 2-3 minutes and add the water.

Pressure cook for 2 whistles. Let the steam get aside.

Serve hot with raita or any Curry of your choice.
