This is an easy as well as quick sweet dish to treat your guests. You can prepare it whenever you have some leftover rabdi at home.
Preparation Time : 30 minutes
Serves : 4-6 persons
Bread : 8 slices, cut into half square or triangles
Refined oil for deep frying
Water : 1 cup
Milk : 1 litre
Malai/ Milk fat / Khoya : 1/2 cup
Sugar : 2 tablespoons + 1 cup
Cardamom/ Elaichi powder : 1/2 teaspoon
Almonds : 1 tablespoon finely sliced Pistachios : 1 tablespoon finely sliced
Silver or golden leaf / varak for garnish.
In a deep bottom pan, add the milk and let it boil. Now condense the milk by adding the malai / milk fat / khoya and constantly boiling and stirring. It will take around 45 minutes for the milk to reduce and become thick. Once the milk thickens, add the sugar and Cardamom powder and mix well. Garnish with the almonds, silver or golden leaf and pistachios.
Heat oil in a pan, deep fry the bread slices until golden brown. Drain excess oil in a kitchen towel and keep aside.
In a pan add the water and sugar and let it come to a boil. Add little cardamom powder and boil till the sugar dissolves in the water and a thick sugar syrup is formed. Add 1 tablespoon Milk and let it come to a boil. You will notice that the dirt in the sugar syrup will accumulate on top. Strain and keep aside.
To complete the dessert, take a glass rectangular or square dish. Soak the fried bread slices in the sugar syrup for a minute and arrange in the glass dish. Cover it with a layer of rabdi and garnish with pistachios, almonds and golden or silver leaf.
For individual serving, you can take a slice of bread soaked in sugar syrup, put a spoonful of rabdi and garnish with the dry fruits.
Refrigerate for 1 hour and serve chilled.
