Well.. If u love Italian food then I’m sure you would want to explore the length and breath of Italian cuisine. Gnocchi usually prepared with potatoes is a mouth watering Italian delicacy with can be prepared with your favorite sauce like pesto cream, white sauce, mushroom sauce. I love Gnocchi and the below recipe prepared with tomato sauce is indeed yum..!!

Preparation Time : 45 minutes
Serves : 4-6 persons

Ingredients :

For Gnocchi :

Potatoes : 5 small to medium
Salt as per taste
Refined flour / Maida : 1 and  3/4 cup Egg : 1 big or 2 small, lightly beaten

For sauce :

Onion : 1 large, finely chopped
Refined / olive oil : 2 tablespoons
Garlic : 1 tablespoon crushed
Tomatoes : 500 grams, boiled and chopped without seeds
Tomato ketchup : 2 tablespoons
Red chilli : 1 teaspoon, finely chopped
Parsley / Coriander leaves : 3 tablespoons, chopped
Salt as per taste
Black pepper : 1 teaspoon roughly crushed
Parmesan cheese : 1/2 cup grated

Method :

For the sauce, heat oil in pan and sauté the onion and garlic until the onion becomes soft. Now add the tomatoes and red chilli. Mix well, boil and let the mixture simmer until the sauce reduces and thickens slightly.

Add the tomato ketchup. Now add the Parsley or coriander, salt and pepper. Mix well and keep aside.

For the gnocchi, boil the potatoes in salted water and cook until potatoes are tender when pierced with a fork.

Drain potatoes and peel while still and remove excess water using a kitchen towel. Immediately pass the potatoes through a Sieve so that the potatoes are finely mashed. Let the potatoes cool completely. Now sprinkle the potatoes with flour and salt. Make a hole in the middle of the mixture and add in the then add the egg in the middle. With your hands, mix the potatoes, flour and egg into a dough.

Knead dough until smooth while dusting the surface with flour if it becomes too sticky. It will take 3-4 minutes. Do not overwork dough.

Now divide the dough into 6 portions. Roll each portion into a sausage like rope with hand. Cut each rope into 1/2-inch pieces.

Now roll each dough piece against the back tines of a fork to make ridges for a design or you can leave it simple.

In a large pot boil salted water to a boil and add the gnocchi and cook until the gnocchi has floated to top. This will take about 2 minutes. Drain excess water and transfer gnocchi immediately to the prepared tomato sauce.

Saute the gnocchi in the sauce. Add in  the parmesan cheese and serve hot.
