This popular street food is my all time favorite. My version is a healthy all veggies bhaji served with the Bombay bun or pao. In case you don’t find the Bombay bun, you can always use the regular bun or even bread.

Preparation Time : 45 minutes
Serves : 4-6 persons

Ingredients :
Bombay bun/ pao : 2 packets or 6 pieces
Butter : 50 grams
Refined oil : 5 tablespoons
Green Chili : 1 chopped
Coriander / Dhania : 3 tablespoons chopped
Lemon : 1 (cut in slices or wedges)
Salt as per taste
Water as required
Onion : 2, finely chopped
Tomato : 2, finely chopped
Potato : 2, boiled and mashed
Beans : 1/2 cup, finely chopped
Capsicum : 1/2, finely chopped
Carrot : 1 small, finely chopped
Cauliflower : 1 small, finely chopped
Peas : 1/2 cup, cut into small florets
Pao Bhaji Masala : 2 tablespoons
Red chili powder : 1/2 teaspoon
Ginger garlic paste : 2 tablespoons

Method :

Boil the carrot, peas, beans and cauliflower. Drain excess water and keep aside.

In a kadhai heat 3 tablespoons Refined oil, add 1 chopped onion and ginger garlic paste until golden brown. Add in the tomatoes and fry for 2 minutes. Now add the pao Bhaji masala, red chilli powder and salt. Mix well. Add in the boiled vegetables, boiled mashed Potatoes and capsicum. Saute for 2-3 minutes. Remove from flame.

Now using a masher, finely mash the bhaji. If you are running out of time then use the blender. Make a rough paste like consistency. Now put the mixture back to the kadhai and turn on the flame. Add 1/2 cup water and 2 tablespoons butter. Mix well and cook for 2 minutes. Add 2 tablespoons Lemon juice. Remove from flame.

Cut the buns into halves. Heat left Refined oil and butter in a tawa and roast the buns on both sides till golden brown.

Divide portions of the bhaji in serving plates and garnish with finely chopped onion, coriander, green chili and lemon wedges. Serve hot with buns. Your pao bhaji is ready!
