One of my all time favorite amongst Vegetarian spread is the Paneer butter masala. The succulent taste of cottage cheese in the rich gravy is something that can ignite your taste buds. I love it with Naan, Rumali Roti or Jeera Rice. This recipe is my variation, fast, simple, and tastes superb. So whenever you have some Vegetarian guests coming in you exactly know what to prepare !!
Preparation Time : 20 minutes
Serves : 4 persons
Paneer / Cottage cheese : 250 grams
Tomato : 1 big
Ginger : 1 inch piece
Garlic : 15 cloves
Onion : 2 big
Cashew / Kaju : 15-20
Salt as per taste
Water as required
Refined oil : 5 tablespoons
Butter : 1 tablespoon
Cream : 2 tablespoons + 1 teaspoon for garnishing
Kasuri Methi : 1 teaspoon
Garam Masala : 1/2 teaspoon
Chicken Masala : 1 teaspoon (optional or you can use Garam Masala 1 teaspoon)
Cumin / Jeera powder : 1/4 teaspoon
Cut the paneer into desired shape. Heat the refined oil and fry the paneer pieces till light brown. Drain excess oil and soak the fried paneer pieces in a bowl with 2 cups water and 1/2 teaspoon salt. Keep aside.
Now boil 2 cups water in a pan or kadhai. Roughly chop the onion, tomato, ginger, garlic and Cashew and add to the boiling water. Boil for 10 minutes. Now drain excess water and make a paste using a mixer grinder.
Reheat the oil used of frying the paneer. Add the butter and the Kaju onion paste. Fry for 5 minutes on medium heat. Add salt. Now in a small bowl add 1/2 cup water and the Garam Masala and chicken masala. Mix and add this paste to the boiling Kaju gravy. Mix well. Add in the paneer pieces. Cook for 2 minutes and turn off the flame. Now stir in the cream and Kasuri Methi.
Take out on a serving dish. Garnish with cream and Kasuri Methi and serve hot with Naan, Rumali Roti or Jeera Rice.
