Gazpacho is a Spanish cold soup perfect for Summers. Serve it with toasted bread croutons, finely sliced  capsicum and tomato.

Preparation Time : 15 minutes
Serves : 4-6 persons

Ingredients :
Water : 2 litres
Olive oil : 1/2 cup
White vinegar : 2 tablespoons
Salt as per taste
Bread / Loaf : 3-4 pieces
Cucumber : 1 chopped
Red capsicum : 1/2 chopped
Green capsicum : 1/2 chopped
Garlic : 5-6 cloves chopped
Onion : 2 chopped (preferably white)

Method :

In a big bowl take 2 litres of water. Add in the olive oil and salt. Mix well. Now put in the bread and all the vegetables. Mix well with your hands for 5-8 minutes.

Now put in a blender and make a puree. Now strain the puree and pour in individual soup bowls or cups. Garnish with finely sliced capsicum, tomatoes, pepper powder and toasted bread croutons. Serve chilled.
