When you have sudden guests at home and are not sure what to make then this egg Curry is a savior. Tastes yumm and goes well with any rice preparations.
Preparation Time : 15 minutes
Serves : 2-3 persons
Egg : 3 Boiled
Melon seeds / Magaz : 3 tablespoons
Poppy seeds / Aphu guti / Khus Khus : 1 tablespoon
Onion : 1 big sliced
Salt as per taste
Turmeric powder / Haldi : 1/4 teaspoon
Garam Masala powder : 1 teaspoon
Green Chili : 1 finely chopped
Water as required
Refined / Mustard oil : 3 tablespoons
Soak the melon and poppy seeds in a cup of water for around 1/2 hour. Till then you can put the eggs to boil.
Now grind the melon and Poppy seeds to a fine paste using a grinder or mortar and pestle.
Make small cut marks in the eggs and sprinkle salt and little turmeric powder. Heat oil in a pan or kadhai and fry the eggs till golden brown. Keep aside.
In the same oil, add the onions and turmeric powder. Saute for 1 minute and add the melon and Poppy seeds paste. Add salt and mix well. Add required amount of water to make the gravy. Let it boil on medium flame and then add in the eggs, chili and Garam Masala. Let it simmer for 2-3 minutes and then turn off the flame.
Your egg Curry is ready. Garnish with coriander and serve hot with rice.
Tip : You can also add 1 tablespoon fresh cream for a rich gravy.
