This is one Spanish recipe I have come across a few days back and this is a must try for health conscious mass as unlike Fried fish which is very common in India, this version is quick and healthy too. Very few Ingredients but amazing tastes and yes like the Spanish do, it tastes best with bread.

Preparation Time : 15 minutes
Serves : 4-6 persons

Ingredients :
Fish fillets : 6 pieces * You can use either Pomfret / King Fish.
Garlic : 3 tablespoons (finely chopped)
Parsley : 5 tablespoons (finely chopped) * You can also substitute it with fresh Coriander leaves
Refined flour /Maida : 2 tablespoons
Vegetable stock : 2 cups
Salt as per taste
Pepper powder : 1/2 teaspoon
Olive oil : 3 tablespoons
*Olive oil tastes best but you can use any Refined oil

Method :

Clean and wash the fish fillets. Keep aside.

Heat olive oil in a pan and immediately add the garlic and Parsley. We want the garlic and Parsley to be warm with the oil but not burn the garlic as it will incur a bitter taste. Now add in the flour. Mix rigorously so that the flour doesn’t stick to the pan. Sauté till the rawness of the flour is gone. Add in the vegetable stock and season it with salt and pepper. Let it boil and then add in the fish pieces. Poach for 5-6 minutes till the fish is fully cooked. The gravy will be thick, however you can always add a little water to adjust the consistency if you think it’s too thick.

Serve hot with bread.
