Savoury Rice flour Pitha is a deep fried snack which is loved for its crunchiness. This Pitha is prepared during the Bihu Celebrations in Assam. These pithas have been given a round shape for easy frying.
Preparation Time : 30 minutes
Serves : 40-50 servings
Rice flour : 500 grams
Refined flour / Maida : 3 tablespoons
Refined oil : 2 cups
Salt : 1/4 teaspoon
Onion seeds / Kalonji : 1 tablespoon
Lukewarm water as required for the dough
In a big bowl, take the rice flour, maida and add the salt and Kalonji seeds. Add 4 tablespoons refined oil and combine well to get a crumble. Make smooth and firm dough by adding very little lukewarm water and knead it well. Let the dough rest for 30 minutes to 1 hour covered.
Now, make small sized balls and flatten it with your hands.
Heat oil in a kadhai or deep bottom pan, now drop in the pithas one by one and deep fry on medium heat till golden brown. Drain excess oil in a kitchen towel.
Your Savoury Rice flour Pithas are ready. Serve it with a cup of tea or coffee.
