When you have kids at home, you are forced to think if they are getting all the nutrients they need to grow healthy. If your kids are going to school, then the chore of preparing a healthy tiffin becomes even tougher. Try this healthy granola bar recipe and pack it along with their tiffin or allow them to snack on whenever they ask you for chocolate…!

Preparation Time : 15 minutes
Makes : 3 inches long 5-6 bars

Ingredients :
Sugar : 3 tablespoons
Butter : 2 tablespoons
Honey : 3 tablespoons
Oats : 3 tablespoons
Raisins : 1 tablespoon
Chopped nuts : 2 tablespoons (You can use a mix of Cashews, Almonds, Apricots, Pistachios, walnuts etc)
Melon seeds : 1 teaspoon
Cornflakes : 3 tablespoons

Method :

Heat a pan and lightly dry roast the oats and Cornflakes for 2-3 minutes. Take out in a plate and keep aside. In the same pan, dry roast the chopped nuts and melon seeds for 2 minutes. Remove from heat and keep aside.

In a non stick pan, add the sugar and let it caramelize on low flame. Make sure the sugar does not burn or else it will give a bitter taste. Also do not stir the sugar. As soon as the sugar caramelizes to a light golden brown colour, add in the butter. Stir with a steel spoon. Add in the honey. Turn off the flame and immediately mix in the raisins, roasted nuts mixture and roasts oats cornflakes mixture.

Grease a flat steel tray or plate. You can use the back of a regular steel plate or also a silicone mat. Put the mixture and shape it into a big rectangle with a thickness of 1 inch. Let it set for 15 minutes in room temperature. Cut into bars and serve.

Store in air tight containers when completely cooled. Refrigeration not required. Store in a cool dry place.
