Green chutney or Hari Chutney is a very basic chutney used in Chaats, Vada Pao, Sandwiches and many other snacks. You can prepare this chutney in advance and store it in the refrigerator for about 3-4 days. Green chutney is essentially a thick paste of mint/pudina leaves and coriander/cilantro/dhania leaves both in equal quantities.

Preparation Time : 10 minutes
Serves : 15-20 persons (makes approx 1 cup)

Ingredients :

Mint /pudina leaves : 1 cup, chopped Coriander/cilantro/Dhania leaves : 1 cup, chopped
Green Chilli : 1 ( Optional, you can add more to make it spicy or avoid it) Lemon / Nimbu juice : 1 tablespoon
Black salt / Regular salt as per taste
Water as required

Method :

Wash and roughly chop the coriander and mint leaves.

In a mixer grinder or blender, add the Mint, Coriander leaves and green chili along with 3 tablespoons water. Grind it into a smooth paste. You can add a little more water if you want a thin chutney. Take the paste out in a bowl, add salt and lemon juice. The lemon juice helps in retaining it’s beautiful green color.

Store the Chutney in an airtight container in the refrigerator and use for 3-4 days.

Serve this Mint Coriander Chutney with pakoras, samosas, chaat, sandwiches or any other snacks.
