Spaghetti with Aubergine

Spaghetti is one of my favorite pastas.I love brinjals too and this authentic Italian recipe brings in the delicate flavors together and gives it a complete punch for a perfect main course. You might have never tried a pasta with brinjal sauce but for this recipe, do give it a try!!

Preparation Time : 30 minutes
Serves : 3-4 persons

Ingredients :
Spaghetti Pasta : 1 packet
Aubergine / Brinjal : 1 big
Garlic : 3 whole cloves
Red chili flakes : 1 tablespoon
Extra Virgin olive oil : 3 tablespoon
Onion : 1 big, chopped
Tomato : 2 big or 3 medium ripe, seeds removed, chopped
Fresh Basil : 1 tablespoon chopped
Parmesan cheese : 1/2 cup, grated
Salt as per taste
Water : 1/2 cup
Refined oil for shallow frying

Method :

Cook the pasta as per packet instructions.

Roughly chop the Aubergine. Heat Refined oil in a pan and shallow fry the Aubergine little by little until golden brown. Drain excess oil and keep aside.

Now heat olive oil in a pan, add the garlic cloves and red chili flakes. Add in the onions, tomatoes and salt. Cook until tender for about 2 minutes. Now add in the Fried Aubergine and toss well. Turn off the flame, transfer the Aubergine to a mixer grinder and blend into a smooth paste using a little water.

Transfer the paste to the pan and turn on the flame. Add in the boiled spaghetti. Toss well. Add the basil and cheese. Toss and remove from flame.

Serve hot.
